Coconut, pineapple and granola bowl

Bol de coco fermentado COCO by Angela con piña en dados, granola con frutos secos y semillas

The kind of bowl you put together in five minutes and eat at your own pace: well-chilled fermented coconut, diced pineapple and a nutty granola that adds crunch on top. The contrast between the tang of the coconut and the sweetness of the pineapple is what makes it work; and if you'd rather drink it, try the kefir-style fermented coconut.

Ingredients

  • 1 tub of natural fermented coconut (125 g)
  • 2 slices of fresh pineapple, diced
  • 3 tablespoons of granola with hazelnuts and almonds
  • 1 tablespoon of pumpkin seeds
  • 1 teaspoon of black sesame
  • 2 dried figs, in pieces
  • 1 teaspoon of honey or agave syrup (optional)

Method

  1. Tip the fermented coconut into a small bowl and smooth it with the back of a spoon.
  2. Scatter the granola, seeds and sesame over one side of the bowl.
  3. Cover the other side with the diced pineapple and add the figs.
  4. Finish with a drizzle of honey just before serving, so the granola stays crunchy.
