Every month, thousands of people in Spain and Portugal look for a plant-based ferment with a creamy texture, no dairy and a short ingredient list. That is, exactly, fermented coconut.
What is fermented coconut?
Fermented coconut starts from the flesh of the coconut —cream and water— which is slowly fermented with lactic cultures. The result is a 100% plant-based food, creamy and with a natural tangy note, with nothing of animal origin. At COCO by Angela it's made organic and fermented in Spain, batch by batch.
How is it made?
The coconut is blended, inoculated with the cultures and spends hours in a warm chamber. While it's there, the bacteria consume the coconut's own sugars and produce lactic acid: the acidity rises, the pH drops and the texture changes. When the batch reaches the point we're looking for, it's cooled, and the cold stops the process. We go into more detail in what happens to coconut when it ferments.
How does it differ from a dairy ferment?
In its origin: one starts from animal milk and the other from coconut. At the table, what you notice most is the flavour, because the coconut leaves its own aroma over the tangy note. And there's the difference in what it doesn't contain: no dairy, no gluten and no added sugars.
Can you ferment coconut at home?
You can, but it takes time, cultures and a fair amount of trial and error: the acidity point and the chamber temperature are hard to repeat in a kitchen. COCO by Angela does it batch by batch, with the same craft spirit, and it arrives ready to open.
The COCO by Angela formats
Three ways to have it:
- Natural fermented coconut 125 g: the individual size, to try it or take it with you.
- Natural fermented coconut 500 g: the family size for the whole week.
- Kefir-style fermented coconut 500 g: runnier and drinkable.
