Fermented coconut: frequently asked questions

Palmeral de cocoteros con montañas al fondo

We answer the most common questions about COCO by Angela's fermented coconut: what it is, what it tastes like, how to store it and where to buy it.

What is fermented coconut?

It's a 100% plant-based food made from the flesh of the coconut, slowly fermented with lactic cultures. The result is creamy, with a natural tangy note and no ingredients of animal origin. At COCO by Angela it's made organic and fermented in Spain, batch by batch.

What does it taste like?

Of mild coconut with a natural tangy note, similar to that of a dairy ferment but with the aroma of coconut over the top. As it has no added sugars, the flavour is that of the coconut and the fermentation.

Is it the same as a dairy ferment?

No. Fermented coconut is a plant-based ferment: it shares the creamy texture and the tangy character, but it starts from coconut and contains no dairy of any kind.

Does it contain dairy?

It contains no dairy or any ingredient of animal origin. It's vegan, dairy-free and gluten-free.

Does it contain sugar?

No added sugars: just coconut and cultures.

What is it fermented with?

With lactic cultures, the same genera involved in other fermented foods (Lactobacillus and Bifidobacterium).

Can you cook with it or use it in recipes?

Yes. It works well at breakfast, in bowls, smoothies, sauces, creams and desserts. You can use it as you'd use any plant-based ferment.

How is it stored and how long does it last?

Keep it in the fridge and eat it before the date on the packaging. Once open, keep it refrigerated and well closed.

Can it be frozen?

It's meant to be eaten fresh and chilled. Freezing it can alter its creamy texture, so we don't recommend it.

What formats is it available in?

In three: natural 125 g (individual), natural 500 g (family) and kefir-style fermented coconut 500 g (runnier and drinkable).

Where can I buy fermented coconut?

In shops, supermarkets and restaurants in Spain and Portugal. Check the map of stockists and search by city, street or shop.
